Exploiting Summer

Summer is about the only time in which I can eat salad. Salads feel too light, fresh and colorful to be eaten in fall or winter time. So of course, while summer is coming to a peak with it in the 90s these few weeks, salads in our house have been plentiful. This particular salad had cooled orzo pasta, cherry tomatoes, basil, onions, chickpeas and fig infused vinegar. What a treat it was to come home to this salad. I also packed it up in my mason jars to take to work.
